Inspired by one of my all-time favourite artists, Owl City. This cocktail captures the warmth, charm and almost ethereal-like nature of his music. This is warming cocktail, perfect for those autumn/winter evenings. This is made with Belstead Gin - Rector’s Cut. I made this gin for Saint Mary the Virgin Church - Ipswich. This gin was created to raise money for the Churches fabrication funds, to help restore the Church. The full story behind the gin is on our News Page.

Owl City has many gospel themes within his music, so this was the perfect cocktail to base it off. This cocktail starts off with strong ginger notes, followed by a sweet lemon kick with a mellow vanilla finish. His song Vanilla Twilight gave me the idea to incorporate vanilla into this drink. The lemon part comes from his memorable summer vibes woven into some of his biggest hits, like Good Time. This is one of my personal favourite cocktails to make, so I’m sharing it with you all. Method 1
Place all ingredients into a mixing glass and add 6-7 cubes of ice in. This is a drink can be stirred if you want more dilution. The idea behind stirring a drink is to chill it, and slightly dilute it down. If you like, place some freshly cut ginger or lemon into the mixing glass for subtle flavour enhancements. Stir for around 1 minute to ensure drink is chilled and diluted. Grab a Martini glass then strain the liquid in.

Garnish with a lemon peel - cut it in a way that it balances on the side of the glass.

Method 2
Place all ingredients into your preferred cocktail shaker, add cubed ice into shaker till its half full. Shake vigorously till the outside of your shaker frosts…that’s when you know its correctly chilled. Grab a Martini glass and strain directly in (use a fine strainer to capture the ice shards if you have one at hand so it doesn’t go into the drink). You can add in freshly cut ginger or lemon to enhance the flavour elements further.

Garnish with a lemon peel - cut it in a way that it balances on the side of the glass.

  • 50ml - Belstead Gin. This gin brings forward flavours of mulberries, apple, ginger, cassia bark, rosemary & juniper. This is a winter inspired gin, that brings out all the flavours of the season with a nice gingery punch. 40% ABV.

  • 20ml - Limoncello. This is an Italian lemon liqueur. Depending on the product you get, it can either be candy-like or sharp/tart. For this, we recommend a sweeter product like Santa Marta Limoncello. These can be found at many retail stores or online. ABV for these products are normally 25%-30%.

  • 25ml - Vanilla Vodka. Rather self explanatory what this product will taste like.

    For this cocktail, we recommend a high quality vanilla vodka. See below for options.

    • Absolut Vanilla Vodka. 38% ABV.

    • Stolichnaya Vanil Vodka. 37.5% ABV.

    • Cariel Vanilla Vodka. 37.5% ABV.

    ABV for these products are normally 35%-40%.

  • 15ml Syrup. With this cocktail, you can amplify specific flavours to your liking. See the list below for syrup recommendations.

    • Regular Sugar Syrup - Sweetens up the drink without introducing the base flavour profile.

    • Vanilla Syrup - Enhances the vanilla flavour elements of the drink.

    • Ginger Syrup - This will really intensify the ginger notes of this drink.
